30 Min Fancy Shmancy (Keto-Friendly) Beef Dinner

Ingredients
2 large pieces of boneless top sirloin steak (I used two 8 oz pieces)
2 cups of fresh spinach
5 oz cream cheese
4 oz mozarella
salt, pepper, garlic powder and any other seasoning to your liking
Kitchen tools:
cookie sheet
mallet (if you don’t have a meat mallet you can use a rolling pin, bottle of wine, or a heavy skillet)
food processor (or strong, determined hands and a bowl)
plastic wrap
cutting board
tooth picks or bamboo skewers
Instructions:
Preheat oven to 350 F.
Add spinach, cream cheese, mozzarella cheese, and seasoning to a food processor and pulse until you have a paste. If you don’t have a food processor, chop up spinach, and mix in cream cheese, cheese and seasoning.
Lay the meat flat on a cutting board.
Trim fat/gristle (optional). If you like chewing for extended periods of time, leave the gristle on.
Lay plastic wrap over meat and use the flat side of your meat mallet to thin out your beef pieces to approximately 1/2 inch.
Spread a thin layer of spinach spread onto one side of your beef. (Thin…not like what you do with your peanut butter sandwich or cream cheese on a bagel. I SEE YOU.)
Start with the narrowest end and roll your beef.
Secure with tooth pick or bamboo skewer.
Spray cookie sheet with cooking spray or use parchment paper/foil for lining.
Transfer meat to cookie sheet and bake for approximately 15 min (20 for well done).
Once meat has cooled off, cut each roll in half and serve.
I quickly microwaved some broccoli to create steamed broccoli, seasoned with S&P, and threw on some asiago parmesan cheese.
